Gabel began his career on the Canadian children's sitcom I Love Mom and then joined the British soap opera Catastrophe, where he filmed from 2001 to 2007. He starred in various British shows over the next several years before making his American television debut in a supporting role on the HBO series Game of Thrones.
Gabel appeared in the films Welcome to the Trap and War of the Worlds Z, and then starred in the third season of ABC's series Body Investigation. Shortly after it closed, Gabel landed a role in the film Interstellar, and in the fall of 2014 began playing the lead role in the CBS procedural Scorpio.
