In 1971, during his final year at medical school, George and his brother Chris directed a one-minute short film that won first place in a student competition. In the same year, George attended film seminars at the University of Melbourne, where he met Byron Kennedy, who became his friend and partner in joint film projects. In 1972, Miller completed his residency at St. Vincent's Hospital and, along with Kennedy, spent all his free time on experimental short films. In the same year, friends founded Kennedy Miller Productions and collaborated on many projects. After Kennedy's death in a plane crash in 1983, Miller retained the company name. In 2009, the company was renamed Kennedy Miller Mitchell in recognition of the role of producer Doug Mitchell.

In 1979, Miller directed the first film about Mad Max, a police officer avenging the death of a family in post-apocalyptic Australia. The main role was played by the young and then unknown Mel Gibson. Miller's debut, filmed for several hundred thousand Australian dollars, was an international hit, grossing about $ 100 million at the box office. After the success of the first film, job offers in Hollywood fell on the director. However, Miller continued the Mad Max series and in 1981 directed the sequel, Mad Max 2: The Road Warrior. In 1985, the series continued with the film Mad Max 3: Under the Dome of Thunder. The fourth film appeared in 2015.

In addition to the Mad Max series, Miller co-wrote and directed the sequel for Babe: The Four-Legged Kid; directed the film Lorenzo's Oil and collaborated with Nick Enright to write the script for it. He also directed The Eastwick Witches, starring Jack Nicholson, Susan Sarandon, Cher and Michelle Pfeiffer.
